At Home Happy Hour

As the weather begins to clear and the sun begins to shine, it’s happy hour time! I enjoy making something super yummy and then calling some of my gal pals to come over to join me before heading out to dinner. What’s a happy hour without a signature cocktail and a superb toasted baguette slathered with goat cheese? Make your next Happy Hour perfect with these fun and fashionable ideas:  

Signature Cocktail - “Robin-tini”

Ingredients
1/2 oz Pucker Berry Fusion Schnapps
1 oz Chambord Vodka
1/2 oz Blue Curacao
1 squeeze lime juice
A sliver or garnish of orange or pineapple slice

Mix, shake and pour all ingredients into a chilled martini glass for this Robin’s egg colored cocktail! Potent and perfect.

Appetizer Toasts - Spinach and Goat Cheese With Pine Nuts

Ingredients
8 oz of spinach, sautéed in olive oil, garlic, and a squeeze of lemon
A small round of goat cheese, room temperature (Whole Foods has a great selection)
1 baguette sliced (have the baker slice it for you!)
1/2 cup olive oil for the baguette slices
4 oz of pine nuts, toasted for 2-3 minutes
1/2 lemon chopped into sprinkle size pieces or grated 
Pistachio oil for drizzling

I always broil my favorite and ever-popular olive oil toasted baguette slices. Simply brush olive oil on each baguette slice, pop them under the broiler for 2-3 minutes and watch them carefully so they don’t burn!
In the meantime, sauté the spinach as mentioned above. 
When the baguettes are toasted to a golden brown, slather on some goat cheese, add a dollop of the spinach, the toasted pine nuts, drizzle some pistachio oil on top, then sprinkle the lemon. Lemon makes just about anything taste better!
