Love Your Leftovers!

Happy Black Friday and leftovers day! I hope everyone had a peaceful and thankful Thanksgiving holiday. I am blessed by so much and a part of it is because of you. So, a big THANK YOU goes out to all of you, my faithful readers! Keep liking, sharing and following!

After a huge holiday dinner, you’re sure to have loads of leftovers. What are you going to do with them? To help you out, I’d like to share a story with you about my sister, Anne.

This past summer, my sister needed some advice (Well, she always does. Ha!) as to what to serve family members and guests for the days after a holiday meal. I suggested to her to go through her refrigerator and be creative with some great side dishes to go with the leftover turkey. So, I experimented and came up with a few inventive ways to help her guests enjoy the Thanksgiving leftovers. Try them for yourself and let me know how it goes!

Leftover corn on the cob?

Cut the kernels off the cob and sprinkle them on a simple green salad.

Leftover stuffing?

Fry it up with some butter and serve it like hash browns for a tasty brunch.

Leftover pearl onions?

Throw them in the turkey soup or sauté them with stuffing for savory hash browns.

Leftover green beans?

Serve them cold and toss them in a green salad. Add some cherry tomatoes, salt and pepper and then drizzle the entire salad with olive oil and balsamic vinegar. And if there are any black olives left, toss those in too!

Leftover veggie tray?

Sauté the veggies and make a veggie scramble with eggs for brunch the next day. And see that salsa hiding way in the back of the frige? Sauté a spoonful of that to spice up your day after Thanksgiving scramble!

Leftover turkey?

Take some of the slices, sauté them with some garlic and more pearl onions, thaw some of that homemade tomato sauce from the freezer and drizzle that on top of the turkey, add some grated mozzarella cheese, bake at 400 degrees for 20 minutes and you, my friends, will have a makeshift turkey cacciatore in a momento!

Tired of the turkey?

Grill some steaks, sauté some onions and mushrooms, add in the green salad with all the leftover fixings (some avocado, too?) and you have a grand ol’ meal.

Don’t be afraid to pull out those leftovers and add some creative twists to the ordinary.  There’s no telling what you’ll find in your refrigerator until you start moving things around and peeking around the sides. That’s when the creative juices will flow. A great tip is to always remember to add vibrant colors to your dinner plate – it’s always about a pop of color even on your dishes!
